Our mission is to obtain the highest quality products while respecting nature and its rhythms. During the entire production process, from the planting of new trees to the harvest, the Finca applies biological principles and will be Bio labelled in the near future. 

Variety

The Hojiblanca is a prestigious variety, mainly found in Andalusia. Respected for its strength and resilience, it has the ability of adapting to extreme soil and climate conditions. Hojiblanca trees do not just survive but even thrive in the cold winters of Andalusia, where other varieties fail to grow.

Finca el Nevazo, located mid-way between the Sierra Nevada and Málaga at an altitude of 800 meters above sea level, is therefore an excellent spot for an Hojiblanca olive grove.

Hojiblanca olives ripen very slowly and finding the optimal harvesting period is a delicate act, resulting in a high variability of the production yield from year to year. On the other hand, the "terroir" in which the trees grow leads to unique organoleptic properties.

El Nevazo Hojiblanca extra virgin olive oil is characterised by its taste and aroma of freshly cut grass, artichoke and aromatic plants. Its entrance on the palate is sweet, with a slight bitterness and a peppery finish in the mouth.

Production process

We harvest the olives at the best possible time of the year. Given the variability of the weather in the region this might vary from late November to early January. During this period of the year olives do not necessarily lead to the best yield but definitely to the best taste and chemical properties.

Once the olives are harvested, they are immediately processed in the nearby olive mill avoiding any unnecessary fermentation. The Finca has the advantage of being located next to a state-of-the-art olive mill.

In order to ensure top quality and flavours, the oil is extracted at around 27°C (cold pressed).

Our olives are processed with traditional techniques and the most advanced equipment. 

EL NEVAZO is a premium olive oil produced in small batches. Best enjoyed with a fresh warm piece of white bread, fresh tomatoes (and jamón ibérico).
